Our Pinot Noir is cold soaked for 24 hours to infuse the colour of the fruit and bring a lively kick to the palate. Hand plunged and open fermented in 100% French oak, of which 30% is new.

‘Immediate appeal here with a step up from Lambrook’s introductory Pinot Noir to the next level with real elegance and fineness on display. There’s an appreciation of region and site with spices and cherry, black plum flavours working hand in hand with distinctly Hills’ herbals with a light layering of bay leaf and eucalyptus. The latter is a tantalising whisper that doesn’t detract but helps in lighting up the palate. Tannins are fine and lithe, and vanillin oak lays down an added background note through to the finish on this most compact, well- made Pinot Noir.’
